How Our Catering Works

We are a very small operation, there are only 2 of us! Therefore, we work best for casual events where guests don’t expect to eat at the same time.

 

We will ask you to choose 4 pizzas from our menu to serve your guests. 

If you’d like a custom menu, we can do that for an additional charge. 

 

We will set up a buffet table in front of the truck with food on it for guests to serve themselves. 

We will adjust according to the weather and move the table if needed. 

 

We are happy to provide appetizers, salads, specialty pizzas & desserts for an additional fee. 

All these options are listed on our catering menu.

We will provide everything we need on our end, the buffet table, plates, napkins, etc.

Mount Chapin: (for up to 75 people)

     Choice of 4 Varieties of Pizza

Mount Chiquita(required for groups of 75-100)

    Choice of 2 Courses:

          4 Varieties of Pizza & 1 additional course

 Ypsilon Mountain(required for groups over 100)

    Choice of 3 Courses:

          4 Varieties of Pizza & 2 additional courses

Long’s Peak

       Choice of 4 Courses

           1 Appetizer, 1 Salad, 4 Varieties of Pizza & 1 Dessert

                                    

Extras:    Add $5 Per Person for each additional appetizer/salad/dessert

               Add $15 Per Person for Charcuterie Spread

 

We are happy to do as many courses for your group as you’d like, but we do have some group requirements.

 

Group Requirements:

            For groups over 75 we require two courses.

            For Groups 100-125 we require three courses or two courses with a variety of starters.

            For Groups 125-150 we require three courses with a variety of starters.

            We unfortunately cannot provide catering for groups over 150 people, unless multiple food trucks are                     present.

 

non-refundable deposit of 50% of total anticipated minimum & signed contract required at time of booking. 

Remaining Balance Due Upon the Completion of the Event.

25% Gratuity will be added to the final bill.

APPETIZERS:

Bruschetta – House Crostini, Tomato, Basil, Garlic, EVOO, Salt, Pepper

Caprese Bites – Mozzarella, Basil, Cherry Tomato, EVOO, Salt, Pepper

House-Made Focaccia Bread – Served with Olive Oil, Balsamic, Garlic, Red Pepper Flake, Parsley

Charcuterie Board – A variety of meats & cheeses, served with crackers, bread, Pickles, Olives, nuts

 

Salads:

House Salad – Mixed Greens, Bell Pepper, Cucumber & Mushroom Topped with Parmesan, Pepperoncini

                Served with House Italian Dressing.

Caesar Salad – Romaine, Parmesan, House Croutons, House Caesar Dressing (contains Anchovies)

 

12” Wood-Fired Neapolitan Pizzas (Choose up to 4 pizzas):

Our dough is made with Authentic, Italian “00” Flour, 2-Day formation. We pull our Own Mozzarella from curd. 

Meeker – Margherita Pizza with Mozzarella, Grated Parmesan, Basil, Tomato Sauce, EVOO

Panorama Peak –Mozzarella, Ricotta, Prosciutto, Arugula, Cherry Tomato, EVOO, Shaved Parmesan

Sky Pond – Mozzarella, Ricotta, Grated Parmesan, Italian Sausage, Broccolini, Garlic, EVOO

Mill’s Lake – Tomato Sauce Pizza w/ Roasted Garlic, EVOO, Basil, Italian Herbs (NO CHEESE!)

Lambeau – Tomato Sauce, House-Pulled Mozzarella, Parmesan 

Lander – Tomato Sauce, House-Pulled Mozzarella, Parmesan, Pepperoni

Gluten Free crust is available upon request. We require a count for how many guests require GF.
